Well, I love my car to death and I can't complain about a single thing about it, other than it could always use some more power, and an LSD. But the rear headrests block a significant amount of my view, and prevent me from looking behind me in my rear view mirror at exit's I'm passing while traveling 30+MPH over the speed limit to see if there are any law enforcement cars parked, waiting to ruin my fun for the afternoon. That and it would be safer because you gain visibility of other cars, lane changing is a little bit less scary.
Since you can't just remove them using a simple latch mechanism, you have to disassemble the interior of your car to remove some clamps that hold the two headrest shafts in.

Fold down both of the rear seats, remove the left and right bolsters (grab the top of them and pull firmly). If you want to, you can remove the two panels with the lights on the c-pillars, but that's too much trouble for the extra room that you get and there's just enough room where you don't really need to.

Now, you need to remove the 4 little black plugs that are a total pain to remove. You need LOTS of force to pull these out, once you get one out, you'l see why. Don't worry about breaking the head off of them, it will only make things easier.

Once those are off, pull the black long plastic piece towards you and downwards. Since those black plugs are such a pain, and the black piece is almost purely cosmetic and meant to help hold down the back shelf (which the seats do anyways) I considered that piece weight reduction. Now, lift up the fabric rear shelf and look where the headrest shafts are. There are two hairpin-like metal clamps holding them in. Pop those off and pull out the headrests.
(Watch your eyes, these things fly off. I know because one hit me square in the eye. Thankfully, I blinked in time)

Pull up the headrests, and put everything back together in reverse order. I skipped that black long piece and the damn plugs, so far, no vibration or adverse effects. Tadaa, your done.
